OKRA GUMBO RECIPE

Great dish for sharing, especially in the cool days ahead. Serve with your favorite whole grain

Ingredients:

  • ¼ cup safflower oil
  • 1 lb. fresh okra (sliced crossways)
  • 1 large yellow onion, medium diced
  • 1 medium green bell Pepper, medium diced
  • 2 stalks celery, ¼” inch slices
  • 2 cloves fresh
  • tbsp. tomato paste
  • ½ tsp. cayenne pepper
  • 2 tsp. smoked paprika
  • 1 tsp. dried thyme
  • 1 tbsp. sea salt
  • 1 ½ quarts vegetable stock
  • 2 bay leaves

Supplies:

  • Cutting board
  • Chef’s knife
  • Large dutch oven or heavy bottom pot

Instructions:

  1. Heat oil in a large heavy pot over medium heat.
  2. Add in the okra, onions, peppers, celery, and garlic and saute for about 5-10 minutes.
  3. Then add in tomato paste and spices, stirring to combine and cooking until fragrant, about 5 minutes.
  4. Taste and adjust flavors as needed.
  5.  Slowly add in the vegetable stock and bay leaf, cook for another 15-20 minutes.
  6. Taste, make adjustments, serve & enjoy!
