The scrumptious Spinach-Artichoke Dip is even more scrumptious as a Pizza!

  • 1 ball yogurt pizza dough
  • 2 garlic cloves
  • 1 tablespoon olive oil, plus more for brushing
  • 3 cups spinach
  • ½ cup chopped artichokes
  • 1 pinch sea salt
  • 1 pinch red pepper flakes
  • ¾ cup Mozzarella cheese
  • 2 tablespoons Parmesan cheese
  • Semolina flour or cornmeal, for dusting the baking sheet

  • Cutting board
  • Chef’s knife
  • Rimless baking sheet or back of a rimmed baking sheet, or back of a large cast iron skillet

  1. Make Pizza Dough: follow the Yogurt Pizza Dough recipe to prepare the dough. (This takes only 10 minutes to make and 10 minutes to rest!)
  2. Preheat Oven & Prepare Toppings: mince the garlic. In a small skillet, heat the olive oil, then add the garlic and saute over medium heat until fragrant- under 1 minute. Add the spinach and cook for 2 to 3 minutes until wilted. Add the chopped artichokes for 1 minute. Season with salt and pepper. Remove from the heat.
  3. Prep Baking Sheet: when the oven is ready, dust a rimless baking sheet or the back of a rimmed baking sheet with cornmeal or semolina flour.
  4. Stretch Pizza Dough: Lightly dust the dough and press into a circle. Rotate gently on knuckles, being careful not to pull or tear it. Let rest for 30 sec- until the dough snaps back a little. Continue rotating on knuckles until evenly stretched.
  5. Add Toppings & Bake: gently place the dough onto the rimless baking sheet. Brush the dough with a thin layer of olive oil. Then spread on the mozzarella cheese in an even layer and place the spinach artichoke mixture on top. Top with the Parmesan cheese. Bake until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven. Slice, serve and enjoy!
