WATERMELON SALAD WITH BALSAMIC VINAIGRETTE RECIPE
Ingredients:
- ½ cup Rosemary
- Balsamic Vinaigrette
- 1 sprig Rosemary leaves
- 1 bunch Arugula
- 1 teaspoon Coarse sea salt
- 1/2 Watermelon
- 2 oz goat cheese
- 2 tbsp fresh cracked black pepper
- 2 tbsp red pepper flakes
Supplies:
- Long wooden spoon
- Cutting board
- Knife
- Deep Saute Pan/Skillet or Stockpot

Instructions:
- Cut the watermelon: Cut the watermelon into cubes and place in bowl with vinaigrette. Let sit- no more than 30min- for flavors to mingle.
- Add the goat cheese: Crumble the goat cheese and add to bowl.
- Mince and toss: Mince the rosemary leaves and add to the bowl and toss everything together. Taste and adjust seasonings if necessary.
- Arrange the serving platter: Add and handful of fresh arugula to a platter, top with the yummy stuff in the bowl and finish with a sprinkle of crushed red pepper, sea salt and pepper.
- Serve and enjoy the “Oohs & Aahhs!”
