WATERMELON SALAD WITH BALSAMIC VINAIGRETTE RECIPE

Ingredients:

  • ½ cup Rosemary
  • Balsamic Vinaigrette 
  • 1 sprig Rosemary leaves
  • 1 bunch Arugula
  • 1 teaspoon Coarse sea salt
  • 1/2  Watermelon
  • 2 oz goat cheese
  • 2 tbsp fresh cracked black pepper
  • 2 tbsp red pepper flakes

Supplies:

  • Long wooden spoon
  • Cutting board 
  • Knife
  • Deep Saute Pan/Skillet or Stockpot

Instructions:

  1. Cut the watermelon: Cut the watermelon into cubes and place in bowl with vinaigrette. Let sit- no more than 30min- for flavors to mingle.
  2. Add the goat cheese: Crumble the goat cheese and add to bowl.
  3. Mince and toss: Mince the rosemary leaves and add to the bowl and toss everything together. Taste and adjust seasonings if necessary.
  4. Arrange the serving platter: Add and handful of fresh arugula to a platter, top with the yummy stuff in the bowl and finish with a sprinkle of crushed red pepper, sea salt and pepper. 
  5. Serve and enjoy the “Oohs & Aahhs!”
